FIELD: food-processing and food- concentrates industry. SUBSTANCE: method involves preparing raw material; providing water extraction, filtering and concentration of prepared material, with extraction process being performed in extracting apparatuses or battery under pressure of 0.02-0.03 MPa at temperature of 80-95 C until weight part of dry (soluble) substances is 10-15%; before concentration process, introducing into extract additives including soda in an amount of 0.1-0.3% by weight of extract and continuously mixing for 10-20 min; providing concentrating procedure at temperature below 80 C and under pressure of 0.055-0.085 MPa until weight part of dry substances is 50-55% and weight part of total sugars at the rate of dry substances is at least 62%, including at least 20% of inulin; maintaining pH value of 4.2-5.6 in ready product; using sand sugar and/or citric acid, and/or ground cinnamon as additive, or mixture may be free from additive. Raw material is dry chicory or mixture thereof with fried chicory and/or non-fried oat grains.
