SUBSTANCE: invention relates to dairy industry and may be used for production of cheese products. Cheese curd composition consists of a mixture of cedar nut flour and rice flour at ratio of 4:1, sugar, water, whole milk, subjected to ultrafiltration, rennet, bacterial starting lyophilised direct introduction culture FD-DVS LH-BO2, a stabilizer and crushed cedar nut kernels. Initial components are used in the declared amount.
EFFECT: cheese paste has high organoleptic indices, high biological and nutritive value, as well as prebiotic and probiotic properties.
