FIELD: biotechnology.

SUBSTANCE: invention represents a method for assessing the quality of day-old chicken, including selective slaughtering and determining biochemical parameters in biological material, where the biological material used is blood plasma, and biochemical parameters used are general antioxidant activity (GAA) and number of end products lipid peroxidation (TBARS), in order to increase its accuracy and expand the field of application of the invention due to taking into account the adaptive ability and resistance of chicken to oxidative stress, activity of vitagen-regulated enzymes is additionally determined. That is combined with activity of superoxide dismutase from vitagen-regulated enzymes and using the ratio of superoxide dismutase activity to the amount of end products of lipid peroxidation as an additional parameter of assessing the quality of chicken.
