SUBSTANCE: strain Streptococcus thermophilus T-6815, having a high growth rate and a stable set of biomass during cultivation, is deposited in the State collection of microorganisms of the normal microflora (SCNM) of the Federal Budgetary Institution of Science of the Moscow Research Institute of Epidemiology and Microbiology. G.N. Gabrichevskiy Federal Agency of Epidemiology and Consumer Protection under collection No. 1267. Streptococcus thermophilus strain of SCNM No. 1267 can be used as a starter of direct introduction for preparation of fermented milk products.
EFFECT: invention allows to produce dairy products having average acidity of 100–120 °T, which is preserved during 14 days of storage, as well as absence of whey in fermented milk products during storage and a dense, prickly bunch.
