SUBSTANCE: invention relates to biotechnology, in particular to strains of microorganisms used for preparation of fermented milk products. Disclosed is a strain of Lactobacillus delbrueckii subsp.bulgaricus T-4809, having high growth activity and used as a starter of direct introduction for preparing a fermented milk product. Strain Lactobacillus delbrueckii subsp.bulgaricus T-4809 is deposited in the State collection of microorganisms of normal microflora (SCNM) of the Federal Budgetary Institution of Science of G. N. Gabrichevskiy’s Moscow Research Institute of Epidemiology and Microbiology of the Federal Supervisory Natural Resources Management Service under collection number No.1262.
EFFECT: strain has a fast set of biomass during culturing, and fermented milk products based on it have low acidity (80–90 °T), which is maintained during three days of storage.
