FIELD: dairy industry.

SUBSTANCE: non-dairy cheese production method involves fermentation of artificial milk and fermented milk mixing with dry ingredients. Dry ingredients include one or more gums and one or more starches. Further heating of mixture to 180 °F and addition of oil into fermented artificial milk in a mixer built-in into the production line with high shearing forces to produce an oil/artificial milk mixture with a defined particle size. Besides, the method includes circulation of oil/artificial milk mixture through the built-in mixer with high shear forces to obtain size of oil drops in artificial milk of 15 mcm or less, air is removed from the oil/artificial milk mixture and the oil/artificial milk mixture is packaged to produce a non-dairy cheese product. Also described is a product produced by such method, and a system for producing a non-dairy cheese product.

EFFECT: invention ensures stability of the product and optimum taste impression in mouth and consistence similar to milk cheese.
