FIELD: brewing industry.
SUBSTANCE: method for beer production involves preparation of wort, wort boiling with hop products, fermentation of wort using cultivated yeast strains, fermentation and ripening of beer, beer filtration, clarification, carbonisation and bottling. Method comprises adding a solution of natural honey, which was previously pasteurized using indirect heating at pressure of 1.5–3 kgf/cm2 and temperature of 63–80 °C holding for 5–90 minutes, followed by filtration.
EFFECT: method allows producing a product with specific organoleptic indices.
