FIELD: food industry.
SUBSTANCE: invention relates to the fat-and-oil-industry. Disclosed is caesar-type mayonnaise sauce characterized by the fact that it is made of packaged mayonnaise, canned capers, mustard, hard cheese, garlic, lemon, anchovies in oil and a protein-vitamin additive. The protein-vitamin additive is obtained by mixing protein hydrolyzate from secondary fish raw materials and a protein-vitamin supplement from caviar juices at a ratio of 1: 7. One should prepare mayonnaise sauce with the following ratio of recipe components, g/ 100 g: packaged mayonnaise - 71.30, canned capers - 13.80, mustard - 2.30, hard cheese - 4.50, garlic - 0.70, lemon - 3.00, anchovies in oil -1.40, protein-vitamin additive - 3.0.
EFFECT: invention allows expanding the range of mayonnaise sauces, getting a product with high nutritional and biological value, simplifying the production technology without losing quality of the final product. The invention also ensures rational use of food resources of the fish processing industry.
