SUBSTANCE: invention relates to the food industry and namely to liquid seasonings containing sesame seeds. One embodiment of a liquid seasoning includes a linear alkanethiol and dimethylpyrazine. There is at least one of 2.5-dimethylpyrazine and 2.6-dimethylpyrazine. While determining the aromatic components of liquid seasoning by solid-phase microextraction and gas chromatography-mass-spectrometry, the ratio of the peak area of the specified linear alkanethiol to the peak area of dimethylpyrazine is 0.05 or more and less than 1.0. Another embodiment of the sesame-containing liquid seasoning includes a linear alkanethiol and dimethylpyrazine. There is at least one of 2.5-dimethylpyrazine and 2.6-dimethylpyrazine. The amount of the linear alkanethiol is 40 ppb or more and 500 ppb or less with respect to the total amount of the liquid seasoning. The amount of the dimethylpyrazine is 10 ppb or more and 800 ppb or less with respect to the total amount of the liquid seasoning.
EFFECT: invention enhances unique sesame flavor in liquid seasonings, which is irresistible and addictive for consumers.
