FIELD: dairy industry.
SUBSTANCE: group of inventions relates to the dairy industry. The food composition contains pasteurized milk enriched with magnesium, with a concentration of magnesium ions from 8 to 25 mmol per liter (mM), where less than 1 CFU/ml is present. The composition is a drink or cheese. A food packaging containing the specified composition is proposed. The method for pasteurized milk production includes the following steps. A source of magnesium ions is added to pasteurized milk until the final concentration of these magnesium ions from 8 mM to 25 mM and the presence of less than 1 CFU/ml is reached.
EFFECT: group of inventions provides a product enriched with magnesium, the method provides a reduction or suppression of biofilms in the liquid, a decrease in the duration of renneting, an increase in the density of the cheese curd and an increase in the level of proteins in soft cheese.
