FIELD: food industry.
SUBSTANCE: breadsticks production method includes dough preparation, fermentation, molding of dough pieces, proofing and baking. As a fermentation component, a liquid starter culture made from triticale flour, tea mushroom infusion and water is used. Fermentation of the liquid starter culture is carried out to an acidity of 12 degrees. When preparing the dough, triticale seeded flour and triticale bran are used. The initial components are taken in a certain ratio.
EFFECT: invention makes it possible to expand the range of breadsticks for preventive use, balanced in amino acid composition, enriched with protein, dietary fiber, vitamins, organic acids, minerals, and having high organoleptic properties.
