FIELD: confectionery industry.

SUBSTANCE: invention relates to the confectionery industry. The method for preparation of pastila involves the preparation of agar-date syrup by mixing dry powdery agar in a technological container with water at a temperature of 15°C at a hydromodule of 1:8-10. The mixture is left to swell for 1 hour. Then the swollen agar is quickly dissolved by heating, date syrup is added, the mixture is boiled at a temperature of 110°C until the mass fraction of dry substances is 85±0.5%. The resulting syrup is cooled to a temperature of 94±1°C. Cold apple, and/or pear, and/or quince puree is beaten in a mixer at high speed for 10-15 minutes until a light fluffy mass is obtained, then, without stopping beating, one should add egg white and beat for another 10 minutes. Then one should add the agar-date syrup and beat for another 2-5 minutes. Then the resulting pastila mass is lined on parchment paper, evenly distributed over the entire surface of the baking sheet, and dried for 5-6 hours at a temperature of 80°C. The finished product is cut into rectangular strips. The starting ingredients are taken in a certain mass ratio.

EFFECT: invention is aimed at obtaining a product with a reduced energy value and increased nutritional value in the absence of added sugar and at expanding the range of pastila.
