FIELD: food industry.
SUBSTANCE: invention can be used in meat processing plants. Pork roll enriched with iodine comprises pork meat, salt and a filling with a vegetable component, moreover, pork carbonate previously injected with brine is used as meat, and boiled chickpeas, sauteed onions, carrots and bell peppers are used as filling. Brine for injection is used in an amount of 20% by weight of the pieces of meat. The initial components are used at the following ratio, wt.%: pre-injected pork carbonate 80, onion 5, fresh carrots 5, bell peppers 5, chickpeas 5, and with the following composition of the injected brine, wt.%: drinking water 84.82, food supplement Iodosin in the form of a concentrate 0.5, nitrite salt 8, ground black pepper 0.18, phosphates 1.5, ground coriander 2.5, granulated garlic 2.5.
EFFECT: proposed pork roll has high organoleptic characteristics, biological value, and expands the range of pork rolls.
