FIELD: baking industry.
SUBSTANCE: invention relates to the baking industry, in particular to devices for baking crust-free bakery products. A conveyor baking electric contact oven is proposed, which contains a baking chamber, a belt with circular motion along the conveyor for moving the baking mold into the baking chamber and a control unit, while a cushion of dielectric material with a height of 10 mm with the possibility of bending is rigidly fixed on the belt made of a current-conducting rubber material, on which the baking mold is fixed, divided into two parts, with a conductive plate fixed on the inner wall, which has the possibility of contact with the electrode, fixed inside the baking chamber, the walls of which are made of Teflon, on which a humidity sensor, a temperature sensor, a fan, an infrared radiation source, an ultraviolet lamp connected via a bus line to the control unit are fixed.
EFFECT: invention provides an increase in the productivity of the oven, as well as a reduction in labor costs in the production of bakery products in the field conditions.
