FIELD: biotechnology.
SUBSTANCE: invention relates to biotechnology, in particular to a DNA structure encoding intracellular fructanase, while the specified structure contains a nucleotide sequence SEQ ID No. 1 or a sequence similar to it that is at least 98% identical to the nucleotide sequence SEQ ID No. 1. The invention also concerns a vector and a cell containing such a structure, and a method for producing an enzyme using them.
EFFECT: enzyme obtained according to the invention provides for effective removal of fructan from grain and vegetable raw materials.
