FIELD: food industry.
SUBSTANCE: modified starch of aewx corn with endosperm genotype with one or two ae doses forming thermally reversible gel is proposed. Modified starch of aewx corn is starch extracted from corn endosperm that has three wx doses and one or two ae doses. The specified starch is subjected to acid hydrolysis, shift force application, enzymatic reaction or another reaction that dilutes, splits the branched structure through enzymes, or degrades native starch. Thermally reversible gel, a method for producing the specified starch, and a food product containing it are also proposed.
EFFECT: invention allows one to obtain more durable gel.
