SUBSTANCE: invention relates to the field of biotechnology. Namely, new corn starch. The starch can be obtained from newly developed corn with the waxy-sugary-2 double mutation, which has low granule-bound starch synthase I (GBSSI) activity resulting in low amylose levels. The newly developed waxy-sugary-2 double mutation corn starch is freeze / thaw stable and has a high viscosity.
EFFECT: compared to starch from existing waxy-sugary-2 double mutation corn, starch from new waxy-sugary-2 double mutation corn showed, among other things, an improved gelatinization profile, starch granule integrity, larger starch granule size, and higher viscosity.
