FIELD: food industry.
SUBSTANCE: invention relates to the food industry and, in particular, to the production of soft processed and hard cheeses. A method for determining the content of table salt in cheese involves the effect of a fixed frequency electromagnetic wave on the cheese under study, measuring the amplitude of the electromagnetic wave that passed through the cheese, then the measured amplitude is compared with the amplitude of unsalted cheese and properly salted cheese and the difference in amplitudes determines the lack of salt or salinity in the cheese under study.
EFFECT: proposed method provides an increase in the accuracy of determining the content of table salt in cheese by a non-contact method.
