FIELD: dairy industry, cheese industry. SUBSTANCE: salting process is conducted in line production method, some whey is removed, then the rest whey is removed followed by mixing cheesy granule with sodium chloride solution using douche technique. Device contains inclined perforated through cylinder for rotating, pipe system to supply cheesy granule and whey, and a tray to collect whey. Cylinder hollow is divided into two sections - upper and lower ones - by threshold ring, whey reflector is designed at the external surface in area of threshold ring. Upper section is connected with pipe system, lower one - with a source to feed sodium chloride solution and douche device. Tray for whey collection is mounted under the upper section, the lower one is supplied with a tray to collect sodium chloride solution. Moreover, the surface of lower section of the cylinder is made as continuum structure for its two thirds of length. EFFECT: higher efficiency. 2 cl, 2 dwg
