FIELD: food industry.

SUBSTANCE: proposed granular pre-gelatinized starch has no more than 15 wt.% of soluble substances and sedimentation volume from 15 to 45 ml/g. In this case, at least 50% of granular pre-gelatinized starch is in a flat shape. Granular pre-gelatinized starch is cross-linked and stabilized. Granular pre-gelatinized starch is well suspended in an aqueous medium. At least 50% of starch grains swell, and no more than 50% of starch grains are fragmented, when treated in water at 95°C. A method for the production of pre-gelatinized starch includes obtaining cross-linked and stabilized non-gelatinized starch with moistening in the aqueous medium and drying in a reel of cross-linked and stabilized moistened non-gelatinized starch under conditions sufficient for starch pre-gelatinization. A method for the production of a food product includes suspending pre-gelatinized starch in a food product at a temperature of no more than 70°C.

EFFECT: invention is aimed at obtaining starch resistant to mechanical impact.
