FIELD: starch industry.

SUBSTANCE: pregelatinized starch has: no more than 15 wt.% of soluble substances; a yellowing indicator not exceeding 10, measured according to ASTM E313; and a sedimentation volume from 20 to 45 ml/g. Moreover, pregelatinized starch is in the form of agglomerates containing starch particles. At the same time, agglomerates of pregelatinized starch are in a flat shape, and each has a thickness of no more than 1/3 of each of a length and a width of the agglomerate. A method for the production of the specified starch and a method for the production of a food product based on the specified starch, as well as a food product are also proposed.

EFFECT: invention is aimed at obtainment of pregelatinized starch-containing raw materials capable of providing both technological stability and required texturizing properties of a product.
