SUBSTANCE: invention relates to the food industry; it can be used in the production of ice cream. Ice cream with low fat content contains fat, nonfat milk solids, inulin or polydextrose, fructose, trehalose, flavoring agent, stabilizers and emulsifiers, whey protein or milk protein concentrates, cocoa powder or fruit puree and fruit interlayer, as well as water, taken in a certain mass ratio.
EFFECT: invention is aimed at the production of a frozen sweet product with low fat content without sucrose with organoleptic indicators as close as possible to a traditional product.
