FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular to ice-cream production. The composition contains milk products, vegetable fat, a flavouring food product or an aromatiser, a stabiliser-emulsifier, water, food fibres. The food fibres are represented by native inulin or nutrioze or polydextrose combined with maltitol and a sweetener. The sweetener is represented by an intensive natural sweetener - sucralose or stevioside.
EFFECT: invention allows to produce a product with enhanced nutrition value, lower calorie content and organoleptical properties maximally approximated to ice-cream of traditional composition.
