FIELD: food industry.
SUBSTANCE: invention is related to food industry, namely to ice cream production. Ice cream includes fat components, milk products, emulsifiers, stabilizers and water. Ice cream contains the protein-based sweetener thaumatin or brazzein in amount of 0.0001–4.99% of the total weight of the product and food fibres in amount of 1–10% of the total weight of the product.
EFFECT: invention ensures production of ice cream with full or partial replacement of saccharose with preservation of density and structure of classic ice cream and is aimed at reduction of the quantity of saccharose consumed together with the product.
