SUBSTANCE: invention relates to the baking industry and can be used in the production of bakery products enriched with a functional ingredient. A bakery product with functional properties includes a mixture of “Viennese Pie Mix”, vegetable oil, drinking water, a fruit mixture “Birola”, crushed almond kernels, candied fruits, cinnamon, a mixture of “Krispy Mix”, almond petals, neutral gel and a biologically active additive (dietary supplement). As a dietary supplement, the product includes a 96.6% alcohol solution of resveratrol with a content of the latter of at least 72 g/l. In this case, the initial components are used in a certain ratio per 1.0 tons of finished products. Alternatively, the bakery product contains wheat flour of the 1st grade, a mixture for the production of bakery and flour confectionery products “Wheat with spelt”, salt, drinking water and resveratrol in the composition of liposomes with a resveratrol content of at least 26 mg/g. In this case, the initial components are used in a certain ratio for 142.5 kg of finished products.

EFFECT: invention makes it possible to obtain preventive products, as well as to expand the range of functional food groups.
