SUBSTANCE: invention is related to confectionary industry and may be used for production of cakes "Rum Baba" cooked on bread starter. Disclosed is a cake with a vegetable antioxidant, which includes prime grade wheat flour, sugar sand, butter, melange, raisins, vanilla powder, salt, pressed yeast, rum, starch molasses and a biologically active additive, wherein the biologically active additive used is 96 % alcohol solution of resveratrol, containing resveratrol of not less than 72 g/l, with the following content of initial components, g: prime grade wheat flour – 4,118.0; sugar sand – 3,075.4; butter – 1,029.0; melange 823.0; raisins 515.0; vanilla powder 20.6; salt 12.4; pressed yeast 206.0; rum one 1.0; starch molasses 176.0; resveratrol alcohol solution – 23.6.

EFFECT: invention allows to manufacture a product of preventive orientation, expand the range of a group of functional food products, namely cakes with anticarcinogenic, hepatoprotective and anti-inflammatory properties.
