FIELD: confectionery.
SUBSTANCE: invention relates to the food industry, in particular, confectionery, and can be used in the production of flour confectioneries, namely, highly nutritious cookies enriched with antioxidants and silymarin, with an high content of protein. Proposed is a method for producting cookies with the addition of an extract of milk thistle germs and a powder of freeze-dried milk thistle germs, wherein at the first stage, dry melange is restored with an extract of milk thistle germs in a ratio of 1:5, the resulting semi-finished product is left for 30 minutes, and then a mixture of whey protein concentrate and high-protein sunflower flour is mixed thereto, the resulting mass is mixed with a mixer, flavouring and vegetable oil are added; at the second stage, wheat flour is mixed with baking powder and sifted through a sieve, a powder of freeze-dried milk thistle germs is added, and dough is kneaded on the extract of milk thistle germs, introducing the mixture produced at the first stage, cocoa powder and other components of the recipe provided for the production of cookies, the dough is kneaded until a homogeneous mass is produced, for no more than 5 minutes, the resulting dough has a room temperature and a humidity of 24 to 26%, then the finished dough is shaped, the shaped dough blanks are laid on a baking sheet covered with parchment paper, baked in a batch-type oven for 10 to 12 minutes at 180°C, the finished cookies are cooled and packaged.
EFFECT: invention allows imparting higher nutritional value to the product due to the high content of antioxidants and the hepatoprotective agent silymarin and the increased content of protein therein, expanding the range of highly nutritious products.
