FIELD: food industry.
SUBSTANCE: invention relates to the food industry, namely baking, and can be used in the production of bread. The method for production of wheat bread on sourdough includes kneading dough, its fermentation, cutting, proofing of blanks and baking bread. When kneading the dough, the food additive O-Tentik Durum is used as sourdough. The dough is kneaded in cold water at a temperature of 0 - + 4°C and baked in the form of a straight triangular prism. The dough is prepared with the following content of prescription components, kg: top grade baking wheat flour 0.120-0.280, food additive O-Tentik Durum 0.005-0.011, salt 0.003-0.006, refined sunflower oil 0.002-0.004, water based on the moisture content of the crumb19-48%.
EFFECT: proposed method for the production of wheat bread provides an improvement in the quality of bread, its organoleptic characteristics and an increase in shelf life, is simple and economical.
