FIELD: biotechnology.
SUBSTANCE: invention relates to the microbiological and food industries and pertains to lactic acid bacteria (LAB). Proposed is a strain of bacteria L. lactis subsp. cremoris 36 deposited in the Russian Collection of Agricultural Microorganisms (RCAM) of the State Scientific Institution All-Russia Research Institute for Agricultural Microbiology (ARRIAM) under the number RCAM 05396 — a component of a bacterial starter culture for producing dietary fermented milk products. The strain has high viability when nutritious components are insufficient in the medium, a high level of biomass accumulation (over 109 kl/ml) after 24 hours of incubation in milk, optimal viscosity characteristics by the time of maximum logarithmic growth. The claimed strain does not form ammonia from arginine, does not grow in media with 4% NaCl and a 9.5 pH, and has high biochemical activity as a component of a bacterial starter for producing dietary products.
EFFECT: creation of a highly viable LAB strain.
