FIELD: food industry.
SUBSTANCE: invention relates to the food industry, in particular to the bakery industry and functional foods. The composition of dough for molded piece bread includes peeled rye flour, fermented rye malt, pressed yeast, granulated sugar, table salt, drinking water. At the same time, as an active food additive, which allows to enrich the vitamin-mineral complex as much as possible, bekmes is introduced, evaporated to a dry matter content of 75-80%. Moreover, the components are used in the following quantity per 100 kg of flour, kg: peeled rye flour - 100, fermented rye malt - 5-5.5, bekmes - 5-5.5, pressed baker's yeast - 0.3-0.4, sugar - sand - 6-6.5, table salt - 0.95-1.0, drinking water - until a smooth and elastic dough is obtained.
EFFECT: invention makes it possible to obtain piece-shaped bread, maximally enriched with a vitamin-mineral complex.
