SUBSTANCE: invention relates to the baking and confectionery industry. The concentrate of a multicomponent food additive used in the baking industry is a separate portion, calculated component by component (separately for each ingredient) per unit of flour mass measurement according to the dough recipe and packed in a closed bag. At the same time, the concentrate of a multicomponent food additive includes exclusively functional ingredients: at least one enzyme selected from the group consisting of: alpha-amylase, glucoamylase, maltogenic alpha-amylase, malt beta-amylase, hemicellulase, pentosanase, xylanase, cellulase, lipase, phospholipase, transglutaminase, protease, peptidase, asparaginase, glucose oxidase, active soy flour, and at least one vitamin selected from the group consisting of: B1, B2, B3, B5, B6, B7, B9, B12, C, A, E, D2, D3, K. Alternatively, the concentrate of a multicomponent nutritional supplement is compressed into a tablet and additionally contains a binder that provides tablet molding.

EFFECT: invention makes it possible to increase the accuracy of component-by-component dosing while excluding the inclusion of a filler in the additive composition.
