FIELD: food industry.

SUBSTANCE: invention relates to the production of functionalized food fiber, which can be used for emulsion stabilization. A method for the formation of functionalized fiber of plant peel includes: a) mixing of enzyme and an aqueous suspension of fiber of plant peel, wherein the specified fiber of plant peel contains less than 25 wt.% of soluble fibers and at least 40 wt.% of cellulose; b) cleavage of the specified fiber of plant peel with the specified enzyme for particle distribution by size D50 of less than 30 mcm; c) denaturation of the specified enzyme to form functionalized amphiphilic fiber of plant peel, using adsorbed enzyme. At the same time, enzyme is one or more enzymes selected from a group consisting of endo-1,4-β-glucanase, β-glucosidase, endopolygalacturonase, and exopolygalacturonase, and fiber of plant peel is fiber of pea peel. Functionalized fiber of plant peel obtained by the specified method and its use for stabilization of an emulsion, and emulsion and a product containing the specified functionalized fiber of plant peel are also proposed.

EFFECT: invention provides an increase in the stability of an emulsion.
