FIELD: food industry.
SUBSTANCE: invention relates to the food industry and can be used in the production of flour confectionery, in particular as a gingerbread product for people suffering from gluten intolerance. Gingerbread from a gluten-free type of mixture is made from a composition of rice and corn flour, sugar, water, honey, butter, ground cinnamon, ground cardamom, ground ginger, ground cloves, eggs, baking powder and burnt oil. At the same time, the initial components per 1000 g of finished products, taking into account losses during heat treatment, are used in the following ratio, g: a composite mixture of rice and corn flour with a ratio of 50:50% - 553, sugar - 166, water - 111, honey - 111, creamy oil - 88, ground cinnamon - 7, ground cardamom - 2, ground ginger - 2, ground cloves - 2, eggs - 88, baking powder - 13, burnt - 332.
EFFECT: invention allows expanding the range of gluten-free flour confectionery products with a high content of vitamin and mineral composition - retinol, vitamins PP, B1, as well as phosphorus, magnesium, sodium and iron.
