FIELD: food industry.
SUBSTANCE: invention relates to the food industry. A method is proposed for obtaining dry lactulose of a crystalline structure by dehydrating a lactulose solution in a vacuum, according to which a lactulose solution with a temperature of 25°C is placed in a drying chamber of a vacuum unit and the drying process is carried out in three stages. At the first stage, the pressure in the drying chamber is reduced to 24 mm Hg. Art. and the drying process is carried out, bringing the temperature of the solution to 50°C, the duration of the first stage is 90 minutes. At the second stage, the pressure is lowered below 4.65 mm Hg. st and heat the solution to a temperature of 55°C, the duration of the second stage is 45 min. At the third stage, the finished product is cooled to a temperature not exceeding 25°C for 60 minutes, followed by unloading and packaging in sealed containers.
EFFECT: invention ensures complete conversion of lactulose, present in an aqueous solution of lactulose, into a crystalline white powder without water content during a continuous technological process.
