FIELD: preparation of food materials in form of stuffing, puree, pastes, finely grained particles, medical preparations and microbiological structures. SUBSTANCE: method is performed in two stages on preheated shelves; during first stage, required vacuum is created and shelves with material are preheated to temperature below maximum permissible level. During second stage, vacuum is reduced and drying is continued till moisture content of material does not exceed 5 percent and its temperature is close to temperature of shelves. Device for realization of this method includes vacuum chamber with shelves for material to be dried; this chamber is connected through vapor-and-air mixture battery drier to water ring pump, high-vacuum pump and refrigerating machine. Device is provided with shelves heating system. EFFECT: reduced power requirements and low cost of finished product. 3 cl, 1 dwg
