FIELD: food industry.
SUBSTANCE: invention relates to the food industry, namely to the production of dough products with stuffing - dumplings. The invention proposes a method for cooking dumplings comprising kneading dough from flour, eggs, salt and liquid, preparing minced meat, including beef, pork, onion, salt and pepper, followed by the formation of the finished product and its freezing, while a one percent aqueous solution of humic acids is introduced into the minced meat and left to mature the minced meat for 30-40 minutes. 6.5 kg of a one percent aqueous solution of humic acids is added to 100 kg of minced meat, and humic acid, or fulvic acid, or himatomelanic acid is used as humic acids.
EFFECT: present invention enables to develop a food product that expands the range of food products with increased nutritional value and high organoleptic characteristics.
