FIELD: food industry; pasta production.
SUBSTANCE: pasta containing wheat flour, salt, and drinking water are proposed. Moreover, pasta additionally includes humic acids. The initial components for pasta are taken in the following ratio, parts by weight: 61.48 of premium wheat flour; 0.12 of salt; 1.5 of humic acids; 36.9 of drinking water. Preferably, the humus acid contains humic acid, or fulvic acid, or hematomelanic acid.
EFFECT: inclusion of humus acids in the pasta recipe increases their biological value.
