FIELD: analytical chemistry.
SUBSTANCE: invention relates to the field of analytical chemistry and can be used to determine the quality indicators of food products. A method for preparing a sample of fat-containing food products for the quantitative determination of 3-monochloropropanediol and glycidol by gas-liquid chromatography with mass spectrometric detection involves rubbing two sample attachments with anhydrous sodium sulfate with a surrogate standard solution of 1,2-bis-palmitoyl-3-chloropropanediol-D5 to obtain sample A and sample B, dissolving in a mixture of tert-butyl methyl ether (TBME) and acetonitrile, sodium hydroxide is added. Then an acidified sodium chloride solution is added to sample A and an acidified sodium bromide solution to sample B, n-Hexane is added, shaken, left until the phases are separated and the top layer is discarded. A mixture of diethyl ether and ethyl acetate is introduced, shaken and left until the phases are separated. The top layer is transferred to a new container, sodium sulfate and a saturated solution of phenylboronic acid in diethyl ether are added, evaporated dry and re-dissolved in isooctane. The finished extract is transferred to a pure vial and used for GC-MS analysis. Moreover, the sample attachments for obtaining sample A and sample B are pre-rubbed with sodium sulfate, the fat fraction is extracted with tert-butylmethyl ether with the addition of acetonitrile and the resulting extract is evaporated dry.
EFFECT: invention provides the possibility of quantitative determination of 3-MCPD and indirect determination of glycidol content in fat-containing food products.
