FIELD: oil and fat industry.
SUBSTANCE: disclosed is a method for determining the qualitative and quantitative composition of monochloropropanediols, glycidol in vegetable oil, involving the preparation of reference samples of the compounds to be determined, followed by analysis of reference samples by gas chromatography with a mass detector, based on the obtained data, constructing a calibration relationship and a regression equation for each determined component, preparing the analysed sample, analysing the analysed sample, wherein the preparation of the reference samples and the analysed sample is carried out by mixing the reference samples and the analysed sample, respectively, with a solvent and an internal standard, in form of 1,3-butanediol with concentration of 5.0 mcg/ml, followed by derivatization with 2.5% phenylboronic acid solution, extraction of phenylboron derivatives of the determined components with hexane, concentration in a stream of nitrogen at temperature of 40 °C, and analysis on a gas chromatograph and registration of components with a mass spectrometric detector in SIM (Selected Ion Monitoring) mode, including for ions of a phenylboron derivative of 1,3-butanediol.
EFFECT: invention widens the range of methods for determining MCPD and glycidol, which enable simultaneous determination in vegetable oils: 3-MCPD, 2-MCPD and glycidol while maintaining high accuracy.
