FIELD: wine industry.
SUBSTANCE: invention relates to wine industry. The method for production of cognac distillate includes separate distillation of wine material with fine lees to obtain an alcohol-containing liquid, distillation of alcohol from an alcohol-containing liquid with fractionation into the head, middle and tail fractions, while after separation from the wine material, a mixture of sodium carbonate and calcium hydroxide is added to the fine lees in a ratio of 1:1 to a slightly alkaline medium of pH 7.2-7.6, kept at this pH value for 4-6 hours, then heated to a temperature of 40-45°C, kept at this temperature for 16-24 hours, after self-cooling, the liquid fraction is separated from the fine lees, returned to the wine material and subjected to fractional distillation.
EFFECT: invention provides a harmonious combination of volatile components, reducing the content of acetaldehyde, isoamyl acetate, methyl acetate, methyl, isoamyl and isobutyl alcohols, volatile acids, enriching with aromatic alcohols and components of enantium ether.
