FIELD: food industry.
SUBSTANCE: wheat bread with a vitamin and mineral supplement is made from premium wheat flour, drinking water, yeast, vegetable oil, food salt, and rosehip extract and selenium prolong (organic selenium in the form of selexene) are used as a vitamin and mineral supplement. The components are used in the following ratio, wt.%: premium wheat flour 56.8, rosehip extract 3.4, yeast 1.1, vegetable oil 0.9, edible salt 0.7, selenium prolong (organic selenium in the form of selexene) 0.3 and drinking water 36.8. The method of making bread is characterized by the fact that yeast and 1/2 part of wheat flour of the highest grade are added to 2/3 of the water heated to a temperature of 30°C, mixed and put for 40 minutes in a thermostat at a temperature of 35°C. Fermented dough is mixed with the rest of the premium wheat flour, salt and rosehip extract are dissolved in the rest of the water and mixed with the dough. Selenium prolong (organic selenium in the form of selexene) is dissolved in vegetable oil and added to the dough. This is followed by kneading for 5-7 minutes, leaving to ferment for 60-90 minutes at a temperature of 20±2°C, punching down, dividing the dough into pieces and forming. This is followed by thawing for 30-50 minutes at a temperature of 34-35°C and baking at a temperature of 200-215°C for 30-35 minutes with moistening of the baking chamber.
EFFECT: invention allows expanding the rang and obtaining a product with an improved vitamin-mineral composition and organoleptic characteristics.
