FIELD: food industry.
SUBSTANCE: method of processing portions of food products includes determining of the target weight of the sliced portion of the food product by the control unit. The acceptance control of a portion of the food product is carried out using an acceptance control unit to determine the mass distribution of the said portion of the food product and provide the mentioned mass distribution for the control unit. A food portion cutting plan is calculated based on the target weight and weight distribution using the control unit. A mechanical gripper is used to grip a portion of the food product and place said portion of the food product in order to carry out the slicing plan. The cutting of the food portion using the cutting unit is carried out in accordance with the cutting plan in order to bring the cut portion of the food product to the target weight. The cut portions of the food product are unloaded to an unloading location, separate from the pickup location, using a mechanical gripper. Also disclosed is a corresponding system for handling food portions.
EFFECT: invention provides more efficient processing of incoming portions of food products with changes in their weight.
