FIELD: food industry.
SUBSTANCE: composition for preparation of soft caramel is proposed, which is prepared from a soft caramel mass obtained based on starch molasses and erythritol at a ratio of 1:(0.33÷0.43), with the addition of coconut oil, carboxymethyl cellulose and powdered semi-finished product from apple pomace, or whey protein concentrate, or cocoa shell.
EFFECT: invention enables expanding the range of soft caramel without added sugar, artificial colours and flavours, with reduced sugar content, increased nutritional value, with reduced fat content by reducing the amount of fat and using natural ingredients with a high content of biologically active substances.
