The method of drying food products in closed drying chambers includes a combination of infrared radiation and convection blowing at a constant reduced pressure, and at first the product is spread evenly on the drying surface of the drying chamber, then the drying chamber is closed tightly and a vacuum pump is turned on, which provides a constant reduced pressure in the drying chamber, then the product is dried with at least one phase, including simultaneous infrared radiation with a wavelength of 2.1 mcm to 4.3 mcm with convection blowing of the product, during the drying phase, constant control of temperature and humidity in the drying chamber is provided in an interactive mode.

EFFECT: improving the quality of drying products while improving energy efficiency and reducing the time spent on drying, as well as expanding functionality through a combination of infrared radiation, convection blowing and reduced pressure.
