FIELD: food industry.
SUBSTANCE: method involves washing of plant products, measuring cutting and laying on mesh trays arranged on endless conveyor of drying chamber. Distributed thermal power is fed by means of double-sided infrared radiation with optimised wavelength and accompanying convective layer surface blowing by air, besides, wherein cycle is multiple repeated till ready product moisture content reaches 12-13 %. Heating is performed by continuous infrared radiation at wavelength of 1.5-3.0 mqm with heat flow density of 3.5-3.8 kW/m2 at accompanying discrete convective blowing with air surface layer.
EFFECT: invention enables higher quality of dry product with reduced power consumption and processing time.
