FIELD: food industry.
SUBSTANCE: proposed chocolate product contains cocoa pulp or cocoa pulp extract. The specified cocoa pulp or cocoa pulp extract contains dietary fibre, from 20 to 95 wt.% cocoa sugar based on the total weight of cocoa pulp or cocoa pulp extract, and cocoa sugar is composed of monosaccharides, disaccharides and/or oligosaccharides. Said cocoa pulp or cocoa pulp extract comprises from 10 to 65% by weight of the chocolate product. Moreover, the cocoa pulp or cocoa pulp extract is treated with the enzyme pectinase and/or cellulase at a temperature in the range from 20 to 75°C for a period of 10 minutes to 20 hours.
EFFECT: reduction or complete elimination of the addition of refined sugar to ensure the sweetness of the product and improves the taste and aroma properties of the chocolate product.
