FIELD: food industry.
SUBSTANCE: invention relates to confectionary industry. Proposed method of drying a composition containing pulp from a Theobroma plant and/or an extract of pulp from a Theobroma plant involves enzymatic treatment of the composition containing pulp from a Theobroma plant and/or an extract of the pulp from the Theobroma plant. Enzymatic treatment of the composition is carried out with pectinase and/or cellulase. Further, a stabilizer is added to the enzymatically treated composition containing pulp from a Theobroma plant and/or a pulp extract from a Theobroma plant. Composition containing pulp from Theobroma plant and/or extract of pulp from Theobroma plant in combination with said stabilizer is dried, preferably using spraying and drying to reduce water content to less than 10.0 wt.% in the obtained composition. Stabilizer is selected from a group consisting of cocoa powder, cocoa fibres, guar gum, psyllium husks, carnauba wax, glycerine, beta-glucan, polysaccharides, food fibres, polydextrose, methylcellulose, maltodextrins, inulin, dry milk, milk whey, demineralised milk whey powder, dextrins, soluble fibres and any combination thereof. At the same time, content of stabilizer in terms of content before drying in composition, also containing pulp and/or pulp extract, is at least 4.0% of composition and not more than 25.0 wt.% of composition, and the content of pulp and/or pulp extract in terms of content before drying in the composition also containing a stabilizer is at least 75.0 wt.% of the composition and not more than 96.0 wt.% of the composition. Also disclosed is a composition for use in food products, containing pulp from a Theobroma plant and/or an extract of pulp from a Theobroma plant, in combination with an added stabilizer, and a food product.
EFFECT: invention is aimed at preservation of organoleptic properties of pulp or pulp extract from Theobroma plant and production of food products with high organoleptic characteristics.
