SUBSTANCE: composition comprising pectin biomass derived from citrus, includes: from 80 to 55 percent by weight of an insoluble fibrous component, including cellulosic material; and from 20 to 45 percent by weight of a soluble pectin component, including easily soluble pectin; where the pectin-containing biomass composition has a coil overlap parameter of 2 or greater. The composition comprising pectin biomass includes: from 80 to 55 percent by weight of an insoluble fibrous component, including cellulosic material; and from 20 to 45 percent by weight of a soluble pectin component, including easily soluble pectin; where the composition comprising activated pectin biomass: (i) is made from the source material containing pectin biomass selected from apple, Jerusalem artichoke or beetroot, (ii) has a coil overlap parameter ranging from 0.5 to 2.0, (iii) and has a parameter a coil overlap parameter that is at least 300 percent greater than the coil overlap parameter of the starting material comprising pectin biomass. The use of a pectin-containing biomass composition as a food ingredient or as a starting material for pectin extraction. A product comprising a pectin-containing biomass composition, where the product is a food product, or nutritional supplements, or disposable diapers, or feminine hygiene products.
EFFECT: inventions make it possible to make dietary fibre from plants containing pectin, which can be easily processed while preserving both soluble and insoluble fibre components with high-quality properties.
