FIELD: biotechnology.
SUBSTANCE: invention relates to biotechnology. A method for activating beer and alcohol yeast is proposed, including the preparation of a yeast suspension and its processing directly in the yeast apparatus with ultrasound with an oscillation frequency of 22 kHz for 3.5-4.5 minutes at a temperature of 16-28°C, selection of 90-95% of the total the volume of the treated yeast suspension and transfer to the next yeast growing apparatus, further exposure of the remaining 5-10% of the yeast suspension to ultrasound with an oscillation frequency of 22 kHz until 100% dead cells are reached, the combination of the obtained yeast extract with the previously processed 90-95% of the yeast suspension. In this case, the wort, before being fed into the yeast apparatus, is treated in a stream with microwave waves with a frequency of 2450 MHz.
EFFECT: invention provides intensification of the process of growing yeast in the alcohol and brewing industries.
