SUBSTANCE: group of inventions relates to a system and a method of determining the filling of crab limbs with muscle tissue. The system contains a calculation module, an information display module, a means for determining the area of muscle tissue and the area of voids, which contains a photo module connected in series, an image pre-processing module, a detection module made on the basis of a detection neural network, a segmentation module made on the basis of a segmentation neural network. The method involves obtaining cross-sections of a crab's limb by cutting the middle walking limb of the crab at an equal distance from its ends, photographing the resulting cross-sections, pre-processing them, where the photos of the resulting sections are converted into tensors, which are normalized in the range of real numbers, and scaled by lossless bilinear interpolation proportions, after which the preprocessed tensors pass through a detection module and a segmentation module, each of which is based on a neural network.

EFFECT: group of inventions makes it possible to increase the efficiency of determining the filling of muscle tissue in the extremities of a commercial crab, while simultaneously reducing the error of this determination.
